This is the perfect meal to make for a summer dinner because it uses fresh summer produce!

  • cooking spray
  • 1 scallion, thinly sliced
  • 1 med. zucchini, diced
  • 1 ear corn, husked and kernels removed
  • 1/2 med. red bell pepper, diced
  • 2 Tbs. shredded fresh basil
  • freshly ground pepper to taste

Lightly coat a large nonstick skillet or wok with the cooking spray. Place over high heat and add scallion, zucchini, corn and bell pepper. Stir-fry until vegetables are crisp-cooked, 2 to 3 minutes. Remove from heat and stir in the basil and pepper. Serve hot, warm or cold.
