Healthy Vidalia Onion Pie

If you are an onion lover then this is a great side dish recipe for you.

Ingredients

  • 1 C. crushed reduced-fat Ritz crackers
  • 1/2 stick butter or margarine, melted
  • 4 large Vidalia onions, peeled and sliced thinly
  • 2 Tbs. butter or margarine
  • 3 large eggs
  • 3/4 C. skim milk
  • 3/4 tsp. fine sea salt
  • Dash of pepper
  • 1/2 C. grated reduced-fat Parmesan cheese dash of sweet paprika
  • 1 Tbs. freshly chopped parsley

Directions

Pre-heat oven to 350 degrees. Mix crushed Ritz crackers and 1/2 stick melted butter or margarine together and press into pie pan. Sauté Vidalia onion slices in 2 Tbs. butter or margarine until onions are softened. Place onions in pie pan. Beat eggs, skim milk, salt and pepper until smooth. Pour over onions. Sprinkle with grated Parmesan cheese, a sprinkle of paprika and parsley. Bake, uncovered, at 350 degrees for 30 minutes or until knife inserted in center comes out clean.
