  • 1 Tbs. oil
  • 12 oz. Kielbasa sausage, sliced into 1/4-in. slices
  • 1 1/2 C. carrots, chopped
  • 1 1/3 C. yellow onion, chopped
  • 1 C. celery, chopped
  • 4 cloves garlic, minced
  • 3 (14 1/2 oz.) chicken broth
  • 1 C. water
  • 1 Tbs. dried parsley
  • 1 tsp. dried rosemary, crushed
  • 1/2 tsp. dried oregano
  • salt and pepper, to taste
  • 6 oz. kale, chopped
  • 2 (14 1/2 oz.) cans cannellini beans, drained and rinsed
  • shredded Parmesan cheese

Heat the oil in a skillet and add the sausage. Cook until slightly browned, tossing occasionally, for 5 minutes. Drain the sausage on paper towels. Leave the oil in the skillet and add in the carrots, onion, and celery. Saute for 3 minutes over medium heat. Add the garlic and saute for an additional minute. Transfer the vegetables to a crockpot. Add in the chicken broth, water, parsley, rosemary, and oregano. Season with salt and pepper to taste. Stir in the kale, sausage, and beans. Cover and cook for 4 to 6 hours on low. Serve topped with cheese
