  • 1 C. uncooked rice
  • 1 1/2 C. coconut milk (light or regular)
  • 1/2 C. water
  • 1/2 tsp. salt (optional)
  • Dash of pepper
  • 1/2 C sun-dried tomatoes
  • 1/2 tsp vegetable oil
  • 1/4 C garbanzo beans, rinsed

Combine rice, coconut milk and water in a 3-qt. saucepan.  Bring to a boil, stir once. Cover with a tight fitting lid or foil; reduce heat and simmer 20 minutes. Remove from heat and let stand (covered) 5-10 minutes longer. In a skillet at the sun-dried tomatoes and the vegetable oil.  Sauté the tomatoes until they are tender.  Add tomatoes and garbanzo beans to the rice and enjoy.
