  • 1 tsp. salt
  • 1 1/2 C. long-grain rice
  • 2 Tbs. oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1 C. frozen peas, thawed
  • 1 tsp. ground turmeric
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground paprika
  • pepper

Boil water in a medium saucepan before adding the salt and rice. Cook for about 15 to 20 minutes, or until rice is tender. Drain the water and put rice in a bowl. In a large skillet, heat oil over medium-high heat. Add onion and stir. Cook until the onion begins to soften or for about 4 minutes. Add the carrot and cook for about 5 minutes, or until it is tender. Add the peas, turmeric, paprika, and cumin. Cook until it is heated completely. Transfer the skillet's contents to the bowl with the rice. Stir to combine ingredients and season with salt and pepper.
