Grab your crockpot and make some hearty veggie chili!

  • 6 C. cooked kidney beans
  • 1 28-oz. can whole tomatoes, crushed
  • 1 15-oz. can tomato puree
  • 1/4 C. chili powder, to taste
  • 1 Tbs. cumin, to taste
  • 1 Tbs. dry mustard
  • 1 Tbs. garlic powder
  • 1 1/2 tsp. cayenne pepper, to taste
  • 1 Tbs. honey
  • 2 Tbs. soy sauce
  • 1 med. onion, diced
  • 1 med. green bell pepper, cored, seeded and diced
  • 1/4 lb. mushrooms, cleaned and sliced
  • grated cheddar cheese for garnish
  • green onion, chopped, for garnish

Add all but the last two ingredients to a large crockpot. Mix well. Bring the mixture to a boil over a medium-high heat. Reduce heat and simmer until the vegetables are tender, about 2 hours. Ladle into soup bowls and garnish with cheddar cheese and green onion.
