Heartland Vegetarian Chili

Ingredients
- 6 C. cooked kidney beans
- 1 28-oz. can whole tomatoes, crushed
- 1 15-oz. can tomato puree
- 1/4 C. chili powder, to taste
- 1 Tbs. cumin, to taste
- 1 Tbs. dry mustard
- 1 Tbs. garlic powder
- 1 1/2 tsp. cayenne pepper, to taste
- 1 Tbs. honey
- 2 Tbs. soy sauce
- 1 med. onion, diced
- 1 med. green bell pepper, cored, seeded and diced
- 1/4 lb. mushrooms, cleaned and sliced
- grated cheddar cheese for garnish
- green onion, chopped, for garnish
Directions
Add all but the last two ingredients to a large crockpot. Mix well. Bring the mixture to a boil over a medium-high heat. Reduce heat and simmer until the vegetables are tender, about 2 hours. Ladle into soup bowls and garnish with cheddar cheese and green onion.
