Hearts of Palm Salad
Ingredients
- 1 12-oz. jar hearts of palm
- 1 head Boston lettuce, torn into bite-sized pieces
- 1/2 C. olive oil
- 1/3 C. red wine vinegar
- 1 Tbs. fresh parsley, chopped
- 1 garlic clove, minced
- salt and pepper to taste
Directions
Place several lettuce leaves on individual plates. Top with hearts of palm. Combine olive oil, red wine vinegar, parsley, garlic, salt, and pepper in a cruet and shake well. Drizzle over salad and serve.
