  • 2 Tbs. oil
  • 1 medium onion, chopped
  • 2 tsp. garlic, finely minced
  • 2 lb. beef boneless chuck, fat trimmed and cut into 1-in. pieces
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 medium carrots, halved and sliced
  • 1 C. pearl barley, uncooked
  • 2 (32 oz.) cartons beef broth
  • 1 1/2 C. frozen sweet peas
  • 1 C. frozen corn

Heat oil in a skillet and saute the onion, garlic, beef, salt, and pepper. Cook for 7 to 10 minutes over medium-high heat, stirring occasionally until the beef is browned. Transfer the contents of the skillet to the crockpot and add in the carrots, barley and broth. Cover and cook on low for 8 to 9 hours. Increase the heat to high and stir in the peas and corn. Cover and cook for an additional 8 to 10 minutes.
