Hearty Beef Stew

Red potatoes, carrots, and mushrooms pair with beef in a comforting stew.

Ingredients

  • 2 tsp. minced garlic
  • 1-1/2 tsp. salt
  • 2 lb. beef round steak, trimmed & cut into 1-inch cubes
  • 3 C. thinly sliced and halved sweet onions
  • 1/2 tsp. dried thyme
  • 1/2 tsp. black pepper
  • 1 can (14-1/2 oz.) diced tomatoes in juice
  • 2 Tbs. tomato paste
  • 2 lb. red potatoes, quartered
  • 2 lb. carrots baby carrots
  • 1 lb. white mushrooms, quartered

Directions

In a slow cooker combine garlic, beef cubes, onions, thyme, and pepper. Stir in potatoes, carrots, mushrooms, tomatoes and their juice, and tomato paste; cook 6-8 hours on high until meat and vegetables are tender. Makes 10 servings. Note: You can stir in a little cornstarch mixed with water during the last half hour if you wish.
