Hearty Beef Stew
Ingredients
- 2 tsp. minced garlic
- 1-1/2 tsp. salt
- 2 lb. beef round steak, trimmed & cut into 1-inch cubes
- 3 C. thinly sliced and halved sweet onions
- 1/2 tsp. dried thyme
- 1/2 tsp. black pepper
- 1 can (14-1/2 oz.) diced tomatoes in juice
- 2 Tbs. tomato paste
- 2 lb. red potatoes, quartered
- 2 lb. carrots baby carrots
- 1 lb. white mushrooms, quartered
Directions
In a slow cooker combine garlic, beef cubes, onions, thyme, and pepper. Stir in potatoes, carrots, mushrooms, tomatoes and their juice, and tomato paste; cook 6-8 hours on high until meat and vegetables are tender. Makes 10 servings. Note: You can stir in a little cornstarch mixed with water during the last half hour if you wish.
