  • 2 T. + 2 tsp. olive oil, divided
  • ½ C. panko breadcrumbs
  • Zest of 1 lemon
  • Salt to taste
  • 12 oz. elbow macaroni, cooked and drained
  • 4 C. broccoli florets
  • 2 cloves garlic, minced
  • ½ tsp. red pepper flakes
  • 1 C. chicken stock
  • ½ C. milk
  • 1 C. cheddar cheese, shredded

Preheat oven to 375 degrees. In a small bowl, combine breadcrumbs, 2 teaspoons of oil, lemon zest, and salt; set aside. In a skillet, heat oil and sauté garlic and broccoli until broccoli turns bright green. Season with red pepper flakes, pour in chicken stock and bring to a simmer. Simmer for 5 minutes until broccoli is tender. Add in milk, heat briefly, and stir in cheddar; remove from heat. In a greased baking dish, toss pasta with sauce and broccoli, and top with breadcrumbs. Bake for 20 minutes until breadcrumbs are golden.
