  • 5 tsp. chili con carne powder
  • 1 tsp. ground cumin powder
  • 1 tsp. ground coriander powder
  • 1 Tbs. red chili flakes
  • 1 tsp. onion powder
  • 1 pinch ground cinnamon
  • 1 lb. lean ground chicken
  • 1 medium onion, chopped
  • 3-4 cloves garlic, minced
  • 1-2 jalapenos, seeded and chopped
  • 1 C. salsa
  • 1 C. crushed tomatoes
  • 1 C. water
  • 2 (15 oz.) cans black beans, drained and rinsed
  • 1 (15 oz.) can whole corn, drained
  • 1 can baked beans with brown sugar

In a large pan, brown the chicken. Add the onion and garlic. Add in the jalapeno, dry spices, salt, and pepper. Saute for 1 minute. Add the salsa, crushed tomatoes, and water. Add the corn and black beans. Cook for 2 to 3 minutes. Add the baked beans and turn the heat to a simmer. Simmer for 20 to 25 minutes, stirring occasionally. Take off the heat when the desired consistency is reached. Serve hot.
