  • 4 boneless skinless chicken breast, halved
  • 3/4 C. seasoned breadcrumbs
  • 2 C. all-purpose flour, seasoned with salt and pepper
  • 4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
  • 1/4 C. grated Parmesan cheese
  • 3/4 C. reduced fat mozzarella cheese
  • 1 C. marinara
  • 1 C. vegetable oil
  • Fresh basil or parsley leaves, for garnish

Preheat oven to 450°F. Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs. Place on baking sheet and repeat with the remaining chicken. Pour oil into a large sauté pan and heat over high heat until almost smoking. Add 2 chicken breasts to the pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and repeat with remaining chicken. Spoon 1 tbsp sauce over each piece of chicken and top each with 1 1/2 tbsp of shredded mozzarella cheese. Bake 5 minutes or until cheese is melted. Garnish with basil or parsley and serve over pasta.
