Hearty Chicken Soup
Ingredients
- Broth
- 1 rotisserized chicken
- 1/2 sm. onion, cut into quarters
- 2 carrots, halved
- 2 ribs of celery, halved
- 8 whole peppercorns
- Soup
- 2 Tbs. canola oil
- 1 sm. onion chopped
- 3 carrots, cut into rounds
- 3 ribs celery, chopped
- 1 pkg. frozen vegetables
- 1 15-oz. can diced tomatoes (for a little kick you can use Rotel tomatoes)
- chicken broth
- cooked chicken
- 1-1/2 C. uncooked noodles
Directions
Remove chicken from bones. Add bones and rest of ingredients for broth and cover with water. Cook for about 1 hour. Cook slightly and strain. Throw all of the solids away.
Saute fresh vegetables (carrots, onion, celery) in oil for about 10 minutes to release all the flavor. Add broth and canned tomatoes and frozen vegetables. Cook until all are soft. Add cut up chicken and noodles. Bring back to a simmer and turn off heat. Let sit about 20 minutes until noodles are soft.
Serve with a crust bread.
