Hearty Crockpot Bacon And Bean Soup

- 6 slices bacon
- 16 oz. dried white northern beans, soaked
- 32 oz. chicken broth
- 1 onion, diced
- 2 cans chopped tomatoes
- 2 cans potatoes
- 5 carrots, diced
- 2 cloves garlic, minced
- 1/2 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1/2 tsp. ground black pepper
Chop bacon into bits and cook in a frying pan on the stove top until crispy. Drain bacon and set aside.
Drain soaking water from beans and pour beans into crockpot.
Add onion, carrots, potatoes, tomatoes, garlic, thyme, rosemary, and pepper.
Pour chicken broth over beans and add enough water to fully cover beans.
Add 1/2 of your cooked bacon, and set the rest aside to add at the end.
Cover and cook on high for seven hours or until beans are cooked though.
Right before serving add the rest of your cooked bacon to the soup and season with salt to taste.
