  • 1 C. peas
  • ½ C. diced tomatoes
  • 1 C. diced ham, cooked
  • 1/3 C. sprouts
  • ¼ C. diced red onion
  • 6 eggs
  • Salt and pepper to taste

Beat together the eggs, and salt and pepper. Heat a large, heavy skillet with a little bit of olive oil. Saute the peas, tomatoes, ham, and red onion. Spread the vegetables evenly across the bottom of the skillet, then pour the eggs over. Sprinkle the sprouts over the eggs and allow the eggs to begin to cook. Once the eggs are starting to set, put the skillet into the oven, heated to 400 degrees, and bake for 8 minutes.
