  • 5 C. vegetable stock
  • 1 C. tomato puree
  • 2/3 C. water
  • 1/3 C. small semolina pasta
  • 1 14 oz. can diced tomatoes
  • 1 1/2 C. frozen sweet whole kernel corn
  • 1 1/2 C. frozen crinkle cut carrots
  • 5 stalks celery hearts, chopped
  • 1 sliced red bell pepper
  • 1 small zucchini, thinly sliced
  • 1 T. garlic salt
  • 1 T. extra virgin olive oil
  • 1 small yellow onion, finely chopped
  • 1/4 C. Parmesan cheese (optional for topping)

In a large pot, combine vegetable stock, tomato puree, and water. Once tomato mixture has started to boil, add pasta, diced tomatoes, olive oil, and garlic salt. In a separate pot, cook frozen corn and carrots. Add to soup when cooked. Add all other vegetables to mixture and cook for 15 minutes. Pour into bowls and sprinkle with cheese.
