  • 1 yellow onion, diced
  • 4 carrots, diced
  • 2 stalks celery, diced
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • 1½ C. cooked ham, diced
  • 1 lb. green split peas
  • 8 C. chicken stock
  • 1 dried bay leaf

In a large pan, heat the olive oil. Add the onion, carrots, celery, salt and pepper. Sauté until they are softened. Add in the diced ham, green split peas, chicken stock and a bay leaf. Bring it to a boil for an hour. Add salt and pepper.
