  • 1 lb. Great Northern Dried Beans
  • 10 C. water
  • 12 oz. lemon-lime soda
  • 2 Tbs. flour
  • 1 ham bone (optional)
  • 3 C. chopped ham
  • 1 onion, finely chopped
  • 1 stalk celery, finely chopped
  • 1/2 C. carrots, shredded
  • 3 garlic cloves, shredded
  • 2 tsp. hot sauce
  • 1 tsp. coarse or sea salt
  • 1 tsp. pepper
  • 1 tsp. liquid smoke
  • 4 bay leaves

Place beans in 5-qt. pot and add 6 C. water, saving other water for later use. Allow to soak overnight. In the morning, drain water and add remaining 4 C. water and soda, and bring to a boil. Remove 1 C. boiling water and mix with flour until well mixed. Spray crock pot with cooking oil spray and pour beans, water and flour mixture into crock pot and stir until well mixed. Add ham bone, ham, onion, celery, carrots, garlic, hot sauce, salt, pepper, liquid smoke and bay leaves, and turn crock pot to high for 2 hours. Turn to medium setting for 6 hours. Serve warm and refrigerate leftovers.
