Hearty Hamburger Pie

This home favorite is a layered dinner pie made with good ground beef, sliced potatoes, sliced onions, chicken broth, seasonings and a flaky top crust. The recipe was modified from one given to my mother in the early 50's from a lovely Scandinavian woman. It's great for leftovers if there are any!

  • 1 1/2 - 2 lb. good ground beef
  • 2-3 large russett potatoes
  • 1-2 large yellow onions
  • 1 can chicken broth or stock
  • 1 pre-made or homemade pie crust
  • salt, pepper and garlic powder to taste
  • flour to coat bottom of baking pan and enough to gently sprinkle each layer

Preheat oven to 350 degrees. Make thin patties. Peel potatoes and slice thinly into rounds. Slice the onion in the same manner. Season the meat patties with salt, pepper and garlic powder on both sides. Use caution with the salt. Take your baking pan and lightly sprinkle flour on the bottom of the pan. You will lightly flour each layer as you build your pie. Next make the first layer with potato rounds and season lightly. Next, do the same with the onions. Now, rip the hamburger patties apart and layer on top of the onions. Repeat at least three times. When the layers are complete, pour a can or about a cup of chicken broth in the bottom of the pan. Cover the pie with your dough making sure to seal it well around the edges. Cut air vents in the top. Bake uncovered for the first 45 minutes or until the crust becomes a medium light brown. Cover the crust with aluminum foil and continue to bake for an additional 25-30 minutes. Remove the foil and let cool for 10 minutes before serving.
