  • 2 chicken breasts, cooked and cubed
  • 1 C. onions, chopped
  • 3 cloves garlic, minced
  • 2 T. olive oil
  • 1 tsp. oregano
  • Salt and pepper to taste
  • 3 carrots, finely chopped
  • 4 red potatoes, boiled and diced
  • 1 lb. dried split green peas
  • 6 C. chicken broth

In a large pot, sauté onions and garlic in oil until softened and fragrant. Add in broth, carrots, peas, oregano, salt and pepper. Simmer for 50 minutes, stirring occasionally. Using an immersion blender (or standard blender, making sure to blend in small batches) blend until creamy. Add in cooked chicken pieces and tender diced potatoes and serve hot.
