  • 3 C. all-purpose flour
  • 3 eggs, divided
  • 3 T. water
  • 1 tsp. olive oil
  • ½ C. ricotta cheese
  • ¼ C. Parmesan cheese, grated
  • Salt and pepper to taste
  • Preferred pasta sauce

In a food processor, add flour and a dash of salt. In a bowl, whisk together 2 eggs, water, and oil; gradually pour in liquid while mixing flour mixture. Continue blending until mixture forms a dough. Shape into a ball, cover, and refrigerate for at least an hour. In a large bowl, make filling by combining ricotta, Parmesan, remaining egg, salt, and pepper. On a floured surface, knead dough for several minutes and roll out with a rolling pin. Cut out circles with a cookie cutter and fill the centers with filling. Fold and seal into tortellini and add to a crockpot. Add in your pasta sauce and cook on low for 2 to 4 hours.
