Hummus is a delicious dip that can double as a topping. You can dip your bread, pita or tortillas, or top your chicken or fish with this delicious crockpot dip!

  • 5 cloves garlic, minced
  • 2 teaspoons +1/2 teaspoon salt
  • 2 teaspoons pepper
  • 1½ lemons, juiced
  • ½ cup tahini
  • 1-1/3 cups chickpeas – soaked overnight
  • 1/8 teaspoon ground cumin
  • 1 cup+ 2 teaspoons olive oil

Place the soaked chickpeas, 2 cloves garlic and 2 teaspoons oil in the crockpot. Add water to cover the chickpeas by at about 4 inches, cover and cook for 5½ hours on high. Add ½ teaspoon salt and cook for 10-15 more min, or until the chickpeas are completely soft. Drain the chickpeas, saving the liquid. In a food processor, process 1 teaspoon of salt, 1 teaspoon of pepper and 3 cloves garlic. Process until garlic is pureed and then add the lemon juice and process again to mix. Add the chickpeas, about ¼ cup of the chickpea liquid, tahini, cumin and ½ cup oil to the food processor and process. Add the rest of the oil and salt until rich and creamy. Scrape hummus into a bowl and serve.
