  • 2 lb. beef stew meat
  • 1 onion, diced
  • 4 cloves garlic, minced
  • ½ C. red bell pepper, diced
  • 2 T. flour
  • 1 ½ T. paprika
  • ½ tsp. thyme
  • Salt and pepper to taste
  • 1 (14 oz.) can beef broth
  • 2 (28 oz.) can crushed tomatoes, with juice

In your crockpot, add beef, onion, garlic, and bell pepper. In a small bowl, combine flour, paprika, thyme, salt, and pepper. Sprinkle over beef and vegetables and coat evenly. Pour in broth and tomatoes with juice. Cook on low for 8 hours until beef is tender. Serve on its own, over buttered noodles, rice, or with thick slices of bread!
