  • 1 T. olive oil
  • 14 oz. smoked sausage, sliced
  • 2 onions, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tsp. paprika
  • 8-10 red potatoes, peeled and chopped
  • 1 ½ C. chicken stock

In a skillet, heat oil and brown smoked sausage until golden brown. Spoon out of skillet and set aside. Returning to the skillet, melt butter and sauté onions and garlic until tender. Season with salt, pepper, and paprika; transfer to a greased baking dish with potatoes and chicken stock. Cover with foil and bake at 325 degrees for 30 to 45 minutes until tender.
