  • 2 C. chopped onion
  • 4 cloves garlic, minced
  • 1 C. green pepper, chopped
  • 1/4 C. olive oil
  • 2 35-oz. cans stewed tomatoes, crushed
  • 2 15-oz. cans kidney beans, drained
  • 2 T. tomato paste
  • 3/4 C. turkey stock
  • 2 T. chili powder
  • 1 T. cumin
  • 1 tsp. oregano
  • 1 T. salt
  • 1/2 tsp. black pepper
  • 3-4 C. cooked turkey, shredded
  • 1 C. shredded cheddar cheese

In a large pot, sauté onion and green pepper in olive oil over medium heat for five minutes. Add garlic, chili powder, and cumin. Stir for a few minutes. Add tomatoes, tomato paste, turkey stock, beans, oregano, salt, pepper, and turkey. Bring to a boil, reduce heat, and let simmer for one hour. Before serving, sprinkle with cheese.
