  • 2 strips bacon, diced
  • 1 lb. ground beef
  • 1 3/4 C. sliced fresh mushrooms
  • 1 large onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 celery rib, finely chopped
  • 2 Tbs. flour
  • 1 C. beef broth
  • 1 Tbs. Worcestershire sauce
  • 1 tsp. dried tarragon
  • 1/4 tsp. pepper
  • 3 C. hot mashed potatoes
  • 3/4 C. shredded cheddar cheese, divided
  • paprika

In a large skillet, cook the bacon until crispy. Drain the skillet, retaining 1 tsp. pan drippings. Set the bacon aside and cook the beef in the pan drippings over medium heat until no longer pink before draining. In a bowl, toss the mushrooms, onion, carrot, and celery in the flour. Add them to skillet with the broth. Stir in the Worcestershire sauce, tarragon, and pepper.

Bring the skillet to a boil, reduce the heat, and simmer for 15 to 20 minutes, uncovered. Add the bacon and transfer the mixture to a greased baking dish. Combine the potatoes and 1/2 C. cheese. Spread them over the beef mixture and sprinkle with paprika and remaining cheese. Bake, uncovered, for 20 to 25 minutes at 350 degrees. Broil 4 in. from the heat for 5 minutes, or until bubbly.
