  • 1 lb. uncooked boneless chicken breasts, cut into small pieces
  • 2 T. olive oil
  • 1 T. crushed red pepper flakes
  • 1 tsp. cumin powder
  • 1 tsp. garlic powder
  • 1 C. white rice, uncooked
  • 1 1/4 C. salsa of your choice
  • 2 C. reduced-sodium chicken broth
  • 1/2 C. fresh cilantro, minced
  • 1 lime, juice of

Use a skillet to heat the oil over medium-high heat. Cut the chicken into bite-sized portions and then top with crushed red pepper flakes, cumin powder, and garlic powder. Transfer the chicken into the heated skillet and stir and sear the meat for around four minutes. Add the rice, salsa, and chicken broth into the skillet and stir to thoroughly mix the ingredients together. Cover, reduce the heat to low, and cook for 30 minutes. Sprinkle cilantro and lime juice over the chicken and rice and serve.
