  • 1 onion, chopped
  • 1 Tbs. olive oil
  • 2 (14-oz.) cans chicken broth
  • 1 C. water
  • 1 (15-oz.) can cannellini beans, rinsed and drained
  • 1 zucchini, chopped
  • 1 C. fresh carrots, sliced
  • 2 Tbs. garlic, minced
  • 3/4 C. elbow macaroni
  • 1 tsp. dried oregano

In large saucepan, cook onions in oil over medium heat for 4 to 5 minutes or until tender. Add broth, water, beans, zucchini, carrots and garlic. Bring to boil. Cook for 4 to 5 minutes. Add pasta and oregano. Return to boil. Cook for 8 to 9 minutes. Reduce heat. Simmer for 10 to 15 minutes or until pasta is tender. Serve hot.
