- 2 C. (8 oz.) shredded Colby Jack cheese, divided
- 1 9-inch frozen ready-to-bake deep-dish pie shell, thawed
- 1/2 lb. thinly sliced deli roast beef, chopped
- 1 C. (1/2 pint) heavy cream
- 4 eggs
- 1/4 tsp. dry mustard
- 1/4 tsp. black pepper
Preheat the oven to 325 degrees F. Sprinkle 1 C. cheese evenly over the bottom of the pie shell; top with the roast beef then with the remaining 1 C. cheese. In a medium bowl, whisk together the remaining ingredients; pour over the cheese. Bake for 55 to 60 minutes, or until a knife inserted in the center comes out clean. Serve immediately.
