Ingredients

  • 1 chicken breast, chopped
  • 1 onion, diced
  • 1 zucchini, chopped
  • 1 squash, chopped
  • ½ C. frozen peas
  • 1 T. ginger, grated
  • 2 T. olive oil
  • 3 T. soy sauce
  • 2 eggs, beaten
  • 2 garlic cloves, minced
  • 2 green onions, sliced
  • 3 C. quinoa

Directions

In a skillet, add in the olive oil. Set the stove to a medium heat. Add in the eggs and cook them over easy. Remove them from the skillet onto a plate. Leave any remaining olive oil in the skillet. Add in the chopped chicken breast, diced onion, chopped zucchini, chopped squash, frozen peas, grated ginger, quinoa and minced garlic cloves. Let the mixture sauté. Add in the soy sauce. Top the mixture off with the over easy eggs. Serve with hot sauce and enjoy.
