This hearty rice and plum casserole pie will be a great and interesting dish to make for dinner. Filled with rice, quinoa and plums this dish will be a delicious dinner.

  • ½ cup White Wine
  • ½ White Onion, finely chopped
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Butter
  • 2 tsp Lemon Pepper
  • Salt & Pepper, to taste
  • 1-2 lbs Chicken, chopped
  • 1 cup plum, chopped
  • 1 package quinoa
  • 1 cup Milk
  • 4 Servings of Rice, cooked
  • 1 pie crust

Melt butter, then combine all ingredients in a separate bowl and mix well until well blended. Preheat the oven to 400 degrees. Preheat a large pan on stove to about 300 degrees. Pour in wine, add onions and garlic, then saute until onions are clear and slightly browned. Add butter and chicken, sprinkle with salt, pepper and lemon pepper, then cook until chicken is browned. In a pie pan lay the pie crust out. Cook pie crust in oven and bake as direct for only about 8 minutes.  Then mix rice and quinoa together.  Add rest of ingredients to the rice mix.  Stir.  Pour onto the pie crust.  Bake at 350 degrees F. for 15 minutes.
