Ingredients

  • 2 T. olive oil
  • 6 shallots, diced
  • 1/3 C. fresh dill
  • 2-3 potatoes, peeled and diced
  • 4 carrots, peeled and diced
  • Salt and pepper to taste
  • 10 oz. white mushrooms, chopped
  • 10 oz. Brussels sprouts, chopped
  • 2 egg yolks
  • 1 C. half-and-half
  • 3 T. lemon juice
  • 1 lb. skinless salmon fillet, cut into pieces

Directions

In a large pot, heat oil and sauté shallots with half of the dill until translucent. Add in potatoes, carrots, salt, pepper, and 4 cups of water. Cover and simmer for 5 to 10 minutes as vegetable soften. Add in mushrooms and Brussels sprouts; continue to simmer until everything is tender. In a bowl, whisk together egg yolks, half-and-half, and lemon juice. Reduce heat and add salmon into the pot, cooking through for about 3 to 4 minutes. Stir in egg mixture and cook for a few minutes as soup thickens. Stir in remaining dill and serve.
