Ingredients

  • 1 C. uncooked penne pasta
  • 2 C. frozen shelled edamame soybeans
  • 6 oz. Cheddar cheese, cut into 1/2-inch cubes
  • 1 lg. tomato, coarsely chopped
  • 1/2 med. cucumber, coarsely chopped
  • 1 sm. yellow bell pepper, coarsely chopped
  • 2/3 C. Italian dressing

Directions

Cook and drain pasta as directed on package. Rinse with cold water; drain. Meanwhile, cook soybeans as directed on package. Rinse with cold water; drain. In a large bowl, toss pasta, soybeans and remaining ingredients. Cover; refrigerate at least 1 hour before serving.
