I used to hate lentil soup, until I figured out how to make it taste good. Not only is this recipe absolutely delicious, it's one of the healthiest soups out there!

  • 1 Tbs. olive oil
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • salt
  • pepper
  • 2 tsp. turmeric
  • 1 qt. low sodium vegetable broth
  • 1 15-oz. can diced tomatoes
  • 1 1/4 C. lentils, rinsed
  • 1 bay leaf
  • 1 tsp. thyme
  • 2 tsp. apple cider vinegar
  • 1/2 C. spinach, fresh

In a large saucepan, saute the onion, carrot, and celery in oil over high heat. After the vegetables have softened, about 10 minutes, add the garlic and continue to saute until fragrant. Season liberally with salt and pepper. 

With the heat still high, add the broth, tomatoes (and juice), lentils, bay leaf, thyme. Stir to combine and simmer, covered, for 15 minutes over medium heat. After 15 minutes, turn heat to the lowest setting and allow to simmer for 15 more minutes. 

Taste the soup for seasonings, and add the apple cider vinegar. Add the spinach and stir in until it wilts. If desired, use a hand blender to smoothen out the texture. Serve warm.
