Hearty Vegetable Chicken Soup
Ingredients
- 2 Tbs. vegetable oil
- 1/4 C. onion, chopped
- 1/4 C. green pepper, chopped
- 3 C. chicken broth
- 1 (29 oz.) or 2 (15 oz.) cans Veg-All Mixed Vegetables, undrained
- 1 (14½ oz.) can seasoned diced tomatoes
- 1½ to 2 C. chicken, cooked and diced
- ½ C. instant rice
- Salt and pepper to taste
Directions
Pour oil into large (3 qt.) saucepan. Sauté onion and green pepper until lightly browned. Add chicken broth and simmer 10 minutes. Add remaining ingredients and simmer 5-7 minutes or until rice is cooked.
Makes 6 to 7 servings.
