  • 4 Tbs. Olive Oil
  • 4 Baby Onions, sliced
  • 2 Tbs. Garlic, minced
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 15 Baby Carrots, sliced
  • 2 C. New Potatoes, peeled and diced
  • 2 C. Green Beans
  • 8 C. Vegetable Broth
  • 2 28 oz. cans Diced Tomatoes, drained

Warm the olive oil in a large stockpot over medium-high heat. Add the baby onions and garlic, and cook until onions are tender and garlic is fragrant. Season with salt and pepper as needed. Add the carrots, potatoes, and green beans. Cook for another 4-5 minutes, stirring continuously. Pour in the vegetable broth and increase heat to high. Bring soup to a boil, then reduce heat to low. Add the tomatoes and cover, letting the soup simmer for 25-30 minutes before serving.
