  • 2 1/2 T. olive oil
  • 1 1/2 C. yellow onion, diced
  • 3 green onions, diced
  • 2 C. carrots peeled and chopped
  • 1 1/4 C. celery chopped
  • 4 cloves garlic, minced
  • 4 (14.5 oz) cans chicken broth or vegetable broth
  • 2 medium vine ripe tomatoes sliced
  • 3 C potatoes peeled and finely chopped
  • 2 T. dried parsley
  • 2 bay leaves
  • 1/2 tsp. dried thyme
  • Salt and freshly ground black pepper

In a large pot over medium heat saute carrots, celery, onions in olive oil for about 4 minutes or until veggies start to soften. Then add in garlic and let cook for about a minute, stirring occasionally. Pour in broth, tomatoes, potatoes, and herbs. Stirring to incorporate all the flavors. Bring contents to a boil then reduce heat to a medium low heat. Cover pot and let simmer until potatoes are tender. (25-35 minutes)

Serve warm.
