Use the crock pot for your next meal to make a New Orleans style classic, gumbo. This dish is stuffed with chicken, smoked sausage, white rice, and numerous vegetables with a spicy after kick.

  • 2 chicken thighs, boneless
  • 4 smoked spicy sausage
  • 10 oz. canned diced tomatoes
  • 3 C. chicken broth
  • 5 C. water
  • 1 C. okra, sliced
  • 1 C. onions, chopped
  • ½ C. green bell peppers
  • ½ C. red bell peppers
  • 1 ½ C. long grain white rice, uncooked
  • 1 tsp. oregano
  • ½ tsp. red pepper flakes
  • 2 tsp. Cajun seasoning
  • 2 tsp. File powder
  • 1 garlic clove, minced
  • 1 tsp. celery salt
  • Salt
  • Grounded black pepper

Cut up the vegetables and sausage links. Set aside. In the crock pot, put in the chicken broth, water, and chicken thighs whole. The chicken will break apart as they are cooked and stirred around. Add tomatoes, onions, bell peppers, red pepper flakes, garlic, oregano, File powder, Cajun seasoning, and celery salt into the crock pot. Cover and cook for 5 hours on low. At the end of the 5 hours, stir and break up the chicken. Pour in the white rice and okra and let sit for another hour. About 20 minutes before gumbo is done, stir in the sausage. Stir and serve.
