  • 2 lg. sweet onions
  • 1 bottle dark beer
  • 1/3 C. cornstarch
  • 2 Tbs. corn meal (optional)
  • 2 Tbs. baking powder
  • salt and pepper, to taste
  • ice water
  • oil, for frying

Slice onion into 1/2 to 1/4 inch rings and soak for 10 minutes in cold water. While they're soaking, heat frying oil in a fryer or pot to 375 degrees.

Mix the cornstarch, corn meal, beer, and salt and pepper in a large bowl. This should form a loose paste. Add beer or flour as necessary. Run the onions through a salad spinner or towel dry well before dipping in batter.

Fry for 4-6 minutes or until golden brown and cooked through.
