  • 2 ½ sticks butter, softened and divided
  • 1 ½ C. sugar
  • 4 eggs
  • 2 T. lemon zest
  • 1 T. ginger, grated
  • ¼ C. lemon juice
  • 1 C. milk
  • 3 C. flour
  • 1 tsp. baking powder
  • Dash salt
  • 4 oz. cream cheese
  • 2 T. honey
  • 2 ½ C. powdered sugar

Beat together 1 ½ sticks of butter and sugar until pale and fluffy. Mix in lemon zest, ginger, and one egg at a time. In your measuring cup, combine lemon juice with milk. In a separate bowl, combine flour, baking powder, and salt. Beat in dry and wet ingredients into batter alternating between flour and milk, beginning and ending with flour mixture. (If batter is too thick, add a couple of tablespoons of milk.) Once batter is well-combined, pour into cupcake liners and bake at 350 degrees for 15-18 minutes until an inserted toothpick comes out clean. Meanwhile, prepare frosting by beating together cream cheese, 1 stick of butter, honey, and powdered sugar.
