  • 3 large eggs
  • 1 C. granulated sugar
  • 1 C. sour cream or Greek yogurt
  • 1/2 C. canola or vegetable oil
  • 2 T. lemon zest
  • 1 T. lemon extract
  • 1 1/2 C. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/3 C. frozen strawberries, thawed and drained
  • 2 1/2 C. powdered sugar

Grease and flour a 9x5-inch loaf pan and preheat your often to 350°F. In a large bowl, add eggs, sugar, and sour cream. Whisk until smooth. Slowly pour in the oil while whisking to combine. Add the lemon zest and lemon extract. Continue whisking. Add the flour, baking powder, and salt. Stir until combined, but not smooth. Some lumps will remain and do not stir them smooth. Pour batter into pan and smooth the top lightly with a spatula. Bake for 50 minutes. In the last 10 minutes of baking, loosely drape a sheet of foil over the pan. Allow loaf to cool for at least 30 minutes before removing from pan. Put the strawberries in a blender or food processor and puree until smooth. In a medium bowl, add the powdered sugar and pour in the strawberry puree. Whisk until smooth. Evenly drizzle glaze over bread when sliced.
