  • 4 T. coconut oil
  • 1 egg
  • 1 ½ C. rolled oats
  • 1/3 C. brown sugar
  • ½ C. milk
  • ¼ C. pomegranate seeds
  • 1 C. maple syrup
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ½ tsp. salt
  • ½ tsp. baking soda
  • 1 tsp. vanilla extract
  • 1 C. apples, diced

Preheat the oven to 350 degrees. Grease a cake pan with non-stick cooking spray. Set to the side. In a bowl, mix up the dry ingredients. In another bowl, mix the coconut oil, egg, milk and vanilla. Pour the dry ingredients into the other bowl. Mix well. Add in the pomegranates and diced apples. Transfer batter into the prepared caked pan. Bake for 45-50 minutes. Pour the maple syrup over the top. Serve while warm and enjoy.
