  • 1 C. butter, softened
  • 1 1/2 C. sugar
  • 2 1/2 C. all-purpose flour
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 Tbs. orange zest, grated
  • 1/3 C. orange juice
  • 1/4 C. rum

Directions

Preheat oven to 350 degrees. Cream together butter and sugar. Add remaining ingredients and mix well. Grease and flour a tube pan. Pour batter into pan and bake for 45-50 minutes. Note: If you prefer not to use rum, increase orange juice to 1/2 cup and use 1 tsp. of rum extract.
