Heavenly Rhubarb Cake Recipe

Very simple cake to make with a delicious cinnamon and sugar topping. Great in the summer when rhubarb is abundant.

Ingredients

  • 3/4 C. margarine
  • 2 C. sugar
  • 1 egg
  • 1 C. buttermilk
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 1/2 C. flour
  • 2 1/2 C. rhubarb, chopped
  • Topping:
  • 1/3 C. brown sugar
  • 1/3 C. chopped walnuts or pecans
  • 1 tsp. cinnamon

Directions

Cream together all cake ingredients and pour into a greased and floured 9x13 pan. Before baking combine topping ingredients and sprinkle over the top of the batter. Bake at 350 degrees for 45 minutes or until a toothpick inserted comes out clean.
