  • 1/2 C. butter
  • 1 onion, chopped
  • 2 1/2 C. finely chopped cooked ham
  • 2 1/2 C. diced and boiled potatoes
  • 1 1/2 C. chopped cooked carrots
  • 1 tsp. parsley
  • Salt and pepper to taste

Begin by melting ¼ cup of butter in a pan.  Sautee the onions in the pan until there tender.  Combine sautéed onion, cooked chopped ham, diced potatoes, chopped carrots, parsley, salt, and pepper in a bowl and mix well.  Melt the remaining ¼ cup of butter in a pan and spread out the hash mixture.  Cook over medium heat until browned.  Turn hash over and cook on the other side is browned.
