Take your fresh summer heirloom tomatoes out of the garden and bake them into this yummy pizza! This recipe takes your typical tomato pizza to another level.

Ingredients

  • 3 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 ½ sticks of unsalted butter (cubed)
  • ¾ cup of ice cold water
  • 1/3 cup of Parmesan cheese
  • ½ cup of mozzarella
  • 4 large heirloom tomatoes, cored
  • 4-6 oz. of goat cheese
  • Fresh basil

Directions

For dough: Preheat oven to 375°F. Then, in a bowl whisk together the flour, salt, and sugar. Next, work butter into the flour with your hands until small balls form. Add the water until dough forms, stick dough in fridge for 30 minutes.

Next, lightly flour surface and roll dough into a circle and then transfer circle to parchment paper. Spread goat cheese evenly and leave a 1 -inch border. Then, sprinkle the mozzarella on the pizza. Layer the tomatoes over the pizza slightly overlapping in a circle, still leaving the 1-inch border. Fold the edges of the crust and lightly seal the pizza and then lightly sprinkle the Parmesan. Let bake for 30 minutes. Lastly, you will sprinkle basil over top and let cool.
