  • 3 heirloom tomatoes
  • 3 cherry tomatoes
  • 4 cloves garlic
  • 1 onion
  • 1 sheet frozen puff pastry
  • 1 pound mozzarella

Preheat the oven to 450 degrees and thaw the sheet of frozen puff pastry. Use a circular cookie cutter, 5 inches is a good size, to make the pizzettes from the puff pastry. Transfer these pizzettes to a baking sheet and place slices of mozzarella on each circle of puff pastry. Slice the tomatoes, onion, and garlic and place these slices on top of the cheese. Add more cheese. Bake for 15 minutes or until the dough is golden brown and the cheese is completely melted.
