  • 1/4 cup bread crumbs
  • 1 tbsp. lemon zest
  • 1/8 cup Parmesan, grated
  • 1 tbsp. dried parsley
  • 1 tbsp. garlic powder
  • 4 firm white fish fillets
  • 4 tbsp. olive oil
  • 4 tsp. lemon juice
  • Salt and pepper to taste

In a small bowl, mix bread crumbs, dried parsley, lemon zest, garlic powder, and salt and pepper to taste. Heat a skillet with enough olive oil to cover the bottom surface. Dip each fish fillet into the breadcrumb mixture and pan fry until just tender. Flip the fillets and add in the rest of the breadcrumbs over each fillet and cook until browned. Squeeze immediately with a side of fresh tartar sauce.
