  • 1 T. olive oil
  • 3 cloves garlic, minced
  • 8 boneless chicken breasts
  • Salt and pepper to taste
  • 2 C. mushrooms, sliced
  • 1 C. Marsala wine
  • ½ C. water
  • ¼ C. cornstarch
  • 3 T. fresh parsley, chopped

In your greased crockpot, add oil and garlic. Season chicken breasts with salt and pepper; place into crockpot. Top with mushroom slices and pour in wine. Cook on low for 5 to 6 hours until chicken is tender. Remove chicken from crockpot. In a small bowl, whisk together water and cornstarch until smooth; stir into crockpot mixture and cook for 15 minutes to allow sauce time to thicken. Return chicken to crockpot and garnish with parsley.
