  • 1/4 C. olive oil
  • 3 cloves garlic, minced
  • 2 T. fresh rosemary, chopped
  • 2 T. fresh thyme, chopped
  • 2 T. fresh sage, chopped
  • 5 lb. bone-in pork roast
  • coarse salt and freshly ground pepper

Preheat your oven to 425°F and lower an oven rack to the lowest spot. In a small bowl, mix together oil with all seasonings. Generously rub the pork roast with salt and pepper, and coat with the herb mixture. Arrange roast, bone side-up, in a large roasting pan. Bake for 15 minutes. Reduce oven temperature to 375°F and bake for another 30 minutes. Rotate the pan and roast for another 30 minutes or until pork is brown. Let stand for 15 minutes before carving.
